Caesar Salad Dressing
Caesar salad is a favorite of my family. We LOVE anchovies.
- 1 Tblsp anchovy paste
- 1/4 cup dijon mustard
- 1 tsp Worcestershire sauce
- 1 clove garlic, pressed
- 1/2 lemon, juiced
- 1/4 cup olive oil
- 1 egg yolk
- 1/2 cup parmesan cheese, grated
Put anchovy paste, dijon mustard, Worcestershire sauce, and garlic into a blender or food processor. Blend until mixed well.
Add the juice of half a lemon. Blend again.
Add the olive oil while the blender runs so it emulsifies.
Add the egg yolk, and blend again.
Add the parmesan cheese and blend.
Pour your dressing over your salad and enjoy!
